Fajita Chicken Casserole
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into strips
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
2 teaspoons fajita seasoning (store-bought or homemade)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 cup shredded Mexican cheese blend (or cheddar)
Salt & pepper to taste
Optional: fresh cilantro, sour cream, avocado for topping
Instructions:
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium heat. Add chicken strips and cook for 4–5 minutes until just browned. Season with salt, pepper, garlic powder, paprika, and fajita seasoning. Remove from heat.
3. In a large mixing bowl, combine cooked chicken, bell peppers, and onion. Toss everything together to coat evenly with the seasoning and juices.
4. Transfer the mixture to a greased 9x13-inch baking dish.
5. Top with shredded cheese and cover loosely with foil.
6. Bake for 20–25 minutes, until vegetables are tender and cheese is melted and bubbly.
7. Uncover and broil for 2–3 minutes for a golden cheesy top, if desired.
8. Serve hot, garnished with chopped cilantro, sour cream, or sliced avocado if you like.
