Savory & Satisfying Lentil Loaf with a Hint of Sweetness
Ingredients:
– 1 cup cooked lentils
– ½ cup rolled oats
– ½ cup breadcrumbs
– ½ small onion, finely chopped
– 1 carrot, grated
– 2 cloves garlic, minced
– 1 tablespoon flaxseed meal + 3 tablespoons water (flax egg)
– 2 tablespoons tomato paste
– 1 teaspoon soy sauce
– 1 teaspoon dried thyme
– ½ teaspoon salt
– ¼ teaspoon black pepper
For the Maple Glaze:
– 2 tablespoons maple syrup
– 1 tablespoon tomato paste
– 1 teaspoon balsamic vinegar
✅Directions:
1. Preheat oven to 375°F (190°C). Grease a loaf pan.
2. In a food processor, pulse lentils, oats, and breadcrumbs until combined.
3. Transfer to a bowl and mix in onion, carrot, garlic, flax egg, tomato paste, soy sauce, thyme, salt, and pepper.
4. Press the mixture into the loaf pan and smooth the top.
5. Mix glaze ingredients and spread over the top.
6. Bake for 35-40 minutes until firm.
7. Let cool slightly before slicing. Enjoy!
