#### **Ingredients**:


* 1 lb ground beef (80/20 works well)

* 1/2 lb ground pork (optional, for richness)

* 1 cup shredded cheddar cheese

* 1/2 cup diced onion

* 1/4 cup dill pickles, chopped (optional but classic)

* 1/4 cup ketchup

* 1 tablespoon yellow mustard

* 2 tablespoons mayonnaise

* 2 eggs

* 1/2 cup breadcrumbs (or crushed pork rinds for low-carb)

* Salt & pepper, to taste

* 6–8 slices bacon


#### **Optional Topping**:


* 2 tablespoons ketchup mixed with 1 tablespoon mustard or BBQ sauce

#### **Instructions**:


1. **Preheat oven** to 375°F (190°C). Line a baking sheet or loaf pan with foil and lightly grease.


2. **Mix meatloaf ingredients**:

   In a large bowl, combine ground beef, pork (if using), cheese, onion, pickles, ketchup, mustard, mayo, eggs, and breadcrumbs. Season with salt and pepper. Mix until just combined—don’t overmix.


3. **Form the loaf**:

   Shape the mixture into a loaf on the baking sheet or press into a loaf pan.


4. **Wrap in bacon**:

   Lay bacon slices over the top, slightly overlapping, tucking ends under the loaf. You can weave them for a fancier look.


5. **Bake**:

   Place in the oven and bake for 50–60 minutes, or until internal temp reaches 160°F (71°C). In the last 10 minutes, brush with the ketchup-mustard topping if desired.
