Cheesy Ground Beef Dip
Ingredients:
1 lb ground beef
1/2 cup diced onion
2 cloves garlic, minced
1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
1 (8 oz) block cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack (or pepper jack for a kick)
1 tsp chili powder
1/2 tsp cumin
Salt and pepper, to taste
Optional: sliced green onions or jalapeños for garnish
Tortilla chips or crackers, for serving
Instructions:
Cook beef: In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
Add garlic & spices: Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook 1 minute until fragrant.
Mix in extras: Add the drained Rotel and cream cheese. Stir until the cream cheese melts and everything is combined.
Cheese it up: Reduce heat to low. Stir in the shredded cheeses until fully melted and creamy.
Serve: Transfer to a serving bowl or a slow cooker on warm. Garnish if desired. Serve hot with chips or crackers.
